Jon’s vegetarian curry: a poor-man’s feast

I’ve come up with a new masterpiece in the kitchen: An indian vegetarian dish with Swedish influences such as apple, parsnip and carrots. In this time of losing weight post-xmas, this delicious cleansing curry is perfect :)

Vegetarian Curry



4 portions


  • 3 dl green lentils
  • 5 – 6 small potatoes
  • 1 parsnip
  • 2 carrots
  • 1 sweet potato
  • 1 broccoli head
  • ½ cauliflower
  • 1 apple
  • 1 onion
  • 1 small leek
  • 3 cloves of garlic
  • 1 red chilli
  • 5 dl chopped tomatoes
  • 2 tbsp tandoori paste
  • vegetable stock
  • 100 g butter
  • ½ turmeric
  • fresh coriander
  • salt
  • pepper

Vegetarian curry – method:

  1. Boil lentils in a pot with turmeric and vegetable stock for about 30 minutes
  2. Dice potatoes, parsnip, carrots, and sweet potato. Boil in a pot for 10 – 15 minutes or until soft
  3. Brown the leek, onion, and garlic in a frying pan
  4. Pour in chopped tomatoes
  5. Slice chilli, apple, cauliflower, and broccoli and add to the frying pan
  6. Add root vegetables when they are soft
  7. Add tandoori paste. NB: stir carefully – the vegetables shouldn’t become mashed
  8. Pour in lentils
  9. Add water and vegetable stock if necessary
  10. Add butter and mix carefully
  11. Add salt and pepper to taste
  12. Garnish with a little freshly chopped coriander

You can also add some peeled prawns if you’d like to make a luxury curry with a subtle taste of the sea.


This curry is a vegetarian explosive taste sensation which is cheap to make. And I guarantee that no one will leave the table hungry :)
