I’ve come up with a new masterpiece in the kitchen: An indian vegetarian dish with Swedish influences such as apple, parsnip and carrots. In this time of losing weight post-xmas, this delicious cleansing curry is perfect :)
Vegetarian Curry
VEGETARIAN CURRY: RECIPE
4 portions
Ingredients:
- 3 dl green lentils
- 5 – 6 small potatoes
- 1 parsnip
- 2 carrots
- 1 sweet potato
- 1 broccoli head
- ½ cauliflower
- 1 apple
- 1 onion
- 1 small leek
- 3 cloves of garlic
- 1 red chilli
- 5 dl chopped tomatoes
- 2 tbsp tandoori paste
- vegetable stock
- 100 g butter
- ½ turmeric
- fresh coriander
- salt
- pepper
Vegetarian curry – method:
- Boil lentils in a pot with turmeric and vegetable stock for about 30 minutes
- Dice potatoes, parsnip, carrots, and sweet potato. Boil in a pot for 10 – 15 minutes or until soft
- Brown the leek, onion, and garlic in a frying pan
- Pour in chopped tomatoes
- Slice chilli, apple, cauliflower, and broccoli and add to the frying pan
- Add root vegetables when they are soft
- Add tandoori paste. NB: stir carefully – the vegetables shouldn’t become mashed
- Pour in lentils
- Add water and vegetable stock if necessary
- Add butter and mix carefully
- Add salt and pepper to taste
- Garnish with a little freshly chopped coriander
You can also add some peeled prawns if you’d like to make a luxury curry with a subtle taste of the sea.

This curry is a vegetarian explosive taste sensation which is cheap to make. And I guarantee that no one will leave the table hungry :)
