Halloween is around the corner and fuck how time flies ! To major holidays like Halloween has become, it is nice to offer something special and appropriate. What better than to bake a delectable pumpkin pie? Pumpkins are the ultimate significator for Halloween weekend and it is possible to bake everything in the infinite with this powerful vegetable.
Since I neither tolerate or like flour I now have a divine 100% gluten-free pumpkin pie for ya all !
Gluten free pumpkin pie
Gluten free pumpkin pie recipe
Do it like this:
20g unsalted butter
1 cup almond flour
1 tbsp sötströ
1 tablespoon hazelnut flour
1 pinch cinnamon
½ tsp of vanilla powder
Pump Filling
50 grams butternut pumpkin
3 + 2 tablespoons whipping cream
1 egg
1-1 ½ tablespoons agave syrup or honey
½ tsp ground ginger
½ tsp ground cardamom
½ tsp of vanilla powder
1 pinch cinnamon

Bake like this – Pastry
Mix all ingredients in a bowl and mix to a dough. Press the dough in a small pie tin with a diamater of about 16 centimeters. Let rest in refrigerator while the filling is made.

Preheat the oven to 150 degrees. Cut pumpkin into pieces (about 50 grams). Put them in a saucepan with 3 tablespoons whipping cream. Skjud until the pumpkin becomes soft (about 10-15 minutes), stirring occasionally. Blend until consistency is smooth.
Beat the egg in a bowl with a regular whisk. Add pumpkin spice, sweetener and the remaining two tablespoons whipping cream. Pour the filling over the pastry. Bake the pie in the oven for about 30-35 minutes until the filling is firm.
Serve this baked gluten-free pumpkin pie with whipped cream and mmmmmm :)
